Sharpening
Each of our knives can be sharpened using conventional methods:
- Arkansas stones
- Whetstones / water stones
- Ceramic hones
- Diamond hones (fastest option, but all abrasives work well)
Do not use electric sharpeners — they are too aggressive and can damage the fine edge geometry.
Maintain a sharpening angle of 18°–22° per side, focusing only on the bevel of the edge, not the whole blade face.
General Care
- Always hand wash and dry your knife immediately after use — never leave it wet or in a dishwasher.
- Store knives in a protective block, sheath, or magnetic strip to protect the edge.
- Avoid cutting on glass, stone, or metal surfaces — use wood or plastic boards.
