Knife Sharpening
Our knives are designed to be maintained with traditional sharpening methods. You can use Arkansas stones, whetstones, water stones, ceramic, or diamond hones. Diamond hones are generally the fastest way to restore the edge, but other abrasives perform well too.
Avoid electric sharpeners — they are too aggressive and will damage the fine edge geometry we apply to every blade.
Sharpening Angle

Maintain an angle between 18° and 22° per side.

Focus only on sharpening the bevel of the edge, not the entire blade face.

If the angle is too steep, you’ll miss the edge. If too shallow, you’ll round it off.

A good sign you’re on track is when your sharpening marks align with and replace the original polish on the edge bevel.
